Breakfast is my family's favorite meal of the day. Dinners and lunches they could take or leave, but pancakes and bacon are always a hit with the kids! In fact, they like breakfast so much, I often serve breakfast for dinner. I'll make French toast or pancakes, served with a cup of yogurt and a slice of bacon on the side. I decided to combine some of my kids' favorite breakfast foods with these Maple Syrup Cupcakes. I added maple syrup to the cupcakes batter, and Greek yogurt with the cream cheese (although I recently discovered you can buy cream cheese with Greek Yogurt already incorporated-who knew?!) Of course, I garnished the cupcake with bacon-because that seems to make any food more palatable in my family! Now, the hard part is waiting until after dinner ("breakfast") to enjoy these cupcakes! Here's our recipe for Maple Syrup Cupcakes:
INGREDIENTS:
Cupcakes
- 2 cups sugar; 2 and 3/4 cups flour; 1 stick butter; 2 tsp. baking powder; 1 tsp. baking soda; 1/3 cup Archer Farms Grade A maple syrup (found at Target); 1 tsp. vanilla; 4 eggs whites; 1 and 1/4 cup milk.
- Greek Yogurt Cream Cheese Frosting:
- 2 and 1/2 cups powdered sugar; 1 stick butter; 1/3 cup softened Greek yogurt cream cheese; 1 tsp. vanilla; 1/4 cup milk.
- Garnish: 5 strips precooked bacon: 1 tablespoon maple syrup
INSTRUCTIONS:
Cupcakes
- Preheat oven to 350 degrees. Using the paddle attachment of a stand mixer, cream the butter and sugar on medium speed until light and fluffy. In a medium bowl, combine the flour, baking powder, and baking soda and gently stir. In a small mixing bowl, combine the egg whites, vanilla, maple syrup, and milk. Alternatively add the mixtures of both bowls-the flour mixture and the egg white mixture-to the creamed butter and sugar. Blend on low speed for 30 seconds to combine the ingredients. Set mixer to medium speed and blend for 2 minutes.
- Line a cupcake tin with cupcake liners. Fill each liner 2/3 full of batter. Bake for 18-20 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean.
- Greek Yogurt Cream Cheese Frosting: Using the paddle attachment of a stand mixer, cream the butter until light and fluffy. Add the cream cheese, vanilla, and milk. Gradually add the powdered sugar. Blend on low speed for 30 seconds. Turn to medium speed and blend for 3-5 or until combined. When cupcakes are cooled, pipe frosting onto the center of each cupcake. Heat bacon according to package directions. Crumble, and sprinkle over the tops of cupcakes. If desired, drizzle 1 tablespoon of maple syrup over the bacon.
